I am interested in getting a Vagabond 2 to use with one or more of my WLX units for outdoor daylight work. Is the WLX indeed strong enough to overpower the sun? Also, I have 3 WLX units. Would I be able to plug all of my WLX units into one Vagabond 2 or would it be better for me to get a Vagabond for each WLX unit?

Whether or not the x1600 will overpower sun will depend on its distance from subject and modifier. If you have it in a 7' octabank at 20', then no. Using something likeo our HOBD at a reasonable distance will be fine. A softbox pretty close in could also do it.

The VII will run all 3 lights at full power for 150-200 shots, and 5.5 second recycle times.

one VII for each light will yield 2 sec recycle and about 600 shots.
