What would be the best reflector to use with an Einstein and a standard 60" umbrella (not PLM). The old 7" or the newer 8.5" High Output Reflector ?

You want the flash to fill the umbrella. So the best reflector is the 7" PLM reflector, or the Spill Kill, or no reflector at all, with the light placed inside the umbrella edges. The 8 1/2" will focus too much light toward the umbrella center and reduce the effective size of the umbrella.
