I wondering what others do for gelling their Einsteins.

Im guessing you could put a gel behind a grip on an 8.5in reflector.

What other options are available?

Unless you specifically need the characteristics of the 8.5 reflector. Then gaffer tape.

I may be overthinking this, but in the case of using a speed ring mounted accessory such as the on-axis speed ring umbrella mounts, is using gels even practical?

For the off-axis/conventional umbrella mounts, is there a recommended gel holder system which still allows for full light coverage to the umbrella?

It can be, and people still do it, regardless of practicality. Without a model lamp it is fairly easy, Einstein model lamps are not too bad, and DigiBees are even better, with regards to gelling.

On axis cages can have gels wrapped around them, and even AlienBees can keep the model lamp.

For a regular umbrella, without a model lamp or with DigiBees or Einstein, you can use the 7UR and gaff tape a gel in place. You can also cut a small "X" in the gel forthe umbrella. http://www.paulcbuff.com/7ur.php
