I use a WL800 in the corner of a large room and bounce off the ceiling for overall lighting. This works ok but not so much in a low ceiling venu. Is there a method prefered by wedding photogs to handle this like a spherical modifier?

By bouncing light off a high ceiling you are a) centering the light and/or b) increasing the distance of the effective light source to subject and/or c) increasing the size of the light source. All three of which assist in even coverage over a large area. By simply placing a spherical modifier on the light, you are turing it into a larger bare bulb source. This can give you softer, omnidirectional light at any given distance, however the light fall off will still be an issue as you get farther from the light.
