My Pocket Wizard Plus III's come with a standard 1/8" to 1/8" stereo connector (two stripes on probe instead of one). Are these ok to use with my Alien Bees B800, instead of a mono connector?

Using the stereo cables will not hurt anything, but they may not work. Depending on how the jack on the receiver is wired, the wrong connections may be closed for the trigger signal.

Since you have both, go ahead and try.
