What would be a realistic limit of Einstein units to be connected to a single Vagabond Mini? I realize it depends a little on how much power is used for each shot. But let's assume each Einstein is firing at 1/2 power.

At half power, two Einstiens will give you about 3.5 to 4 second recycle. Three E640s is about the practical limit for a single Vagabond Mini.
