I shoot star circles using an intervalomoter. Some image stacks last 5 or 6 hours.
Could I use a Mini with a canon a/c adapter to accomplish this.

I see no reason it cannot. The power draw is probably well under 120W, and you should be able to get +/- 80 watt-hours out of it.

It would be much more efficient energy wise and less clumsy to use a DC power source directly instead of converting a DC to AC then to DC again.
