I just gave it a try - connected Einstein via PC sync, used 7D as wireless commander and 580EX-II in slave mode. It worked fine in ETTL and manual. I'd double check your camera settings for the ST-E2, batteries in the Speedlites, etc.

Obviously the CSRB+ with a hot shoe adapter would fire your Speedlites and integrate with the Cybersync system if you went that route to trigger your Einstein.

Also, the Canon Rumors site mentions a possible new Canon flash in the future with built-in radio wireless and a new radio-style ST-E2 to command it.

UPDATE: I was unable to replicate concurrently using an Einstein connected to the camera via a sync cord, along with an ST-E2 and two 430EXs. Only the Einstein would fire. Looks like I really need another wireless solution. Thanks for your suggestions.

Did the speedlites fire if the E640 was not plugged in? The hotshoe should work the same regardless of what the PC port is doing.

After trying different settings on the ST-E2, I was able to get the Einstein via PC sync and 2 x 430EX via ST-E2 to work simultaneously. The key setting on the ST-E2 was the RATIO button. If it was not turned on, the 430EXs would not fire in manual mode, though ETTL mode worked fine. I always have my flashes set to manual, so I had not tried that combination previously.

Thanks again for the info and suggestions. Now it's time to get shooting!

Oh, and make sure the slave is OFF on the Einstein (Slave Eye Status Screen - OFF).
